The Microbial Sciences Building houses the Department of Bacteriology, the Department of Medical Microbiology and Immunology (MMI), and the Food Research Institute (FRI). The first bacteriology professor was Harry Russell, who joined the UW faculty in 1893. Bacteriology faculty developed innovative heat-processing procedures for canned foods and pasteurization of dairy products. MMI has made fundamental contributions to the study of infectious disease and immunity, while FRI conducts collaborative food safety research, especially in the areas of dairy and meat safety.
